Recipe box

I've been trying to cook more and eat out less, something that's been paying off both financially and health-wise (although our kitchen is a constant mess). Last night we had a bit of a party (To reiterate - Dee's friend Salma was visiting, a couple more folks dropped in, we watched Dostana and Salma practiced doing mehndi on us) and I spent most of it cooking (and running into the living area, pans in hand, to see what everyone was laughing about). End result: 12 tuna filled onigiri, 1 pan of lamb meatloaf (with cannoli beans), 4 egg sandwiches (frozen to eat during the week) and 30 chocolate-mint cookies. There was... a lot of washing up, after.

* Lamb Meatloaf on RealSimple. There were a couple of ingredients I didn't have on hand (my beans are sadly onion and pepper-less), but otherwise I followed the directions exactly. Yuuuuum.

* Homemade Thin Mints at Planet Green. These don't taste anything like thin mints (we had some on-hand to compare), but they make a good chocolately tea biscuit. We don't have a double boiler, so I melted the chocolate in a small coffee pot in a pot of boiling water. Next time I'll drizzle the chocolate over the cookies instead of dunking them - less hassle and it'll cut down on the chocolate intensity.

* Egg sandwiches were fried eggs and Havarti cheese on store-bought challah rolls with some honey maple mustard spread about (usually I put ham on too, but I was out). I wrap 'em in plastic wrap, seal them in a plastic baggie, and toss them in the fridge. Then in the morning I grab one while I'm running out the door and heat it when I get to work. Wa la! Hot, tasty, protein-y breakfast.

* This is a good how-to video for onigiri (although I made my rice in a pot on the stove). Mmmm. I brought one for lunch but totally forgot the nori [mournes].

From last week:

* Chickpea and Spinach Stew on NPR. I spaced on the paprika and used half chili powder and half cumin instead. Still turned out very tasty.

* Original Nestle Toll House cookies on Allrecipies. This is my go-to chocolate chip cookie recipe - they come out perfect every. time. (Dee: 'omg, I'm having an orgasm in my mouth'.)

* 30 Minute Shepherd's Pie on Food Network. This is Dee's dish (in that she makes it all the time) and, holy shit, since we're talking about food-gasms. She always subbs in boxed mashed potatoes (see the comments) and it turns out fantastic.



This is probably gonna turn into a regular thing. Do I have any food icons? [checks] No. Well, sort of. Need to get on that.
