My go-to breakfast (plus yogurt and a banana) this week, slightly altered from this recipe.


* 1 cup all-purpose flour

* 1 cup instant oats

* 8 slices bacon, cooked and crumbled

* 3 teaspoons baking powder

* 1/4 teaspoon salt

* 1 egg

* 1/2 cup milk

* 1/2 cup vegetable oil

* 2/3 cup maple syrup


1) Preheat your over to 400F and grease/paper-cup-line a muffin pan.

2) In a large bowl, combine flour, oats, bacon, baking powder, and salt.

3) In a smaller bowl, whisk the remaining ingredients together.

4) Pour the wet stuff into the dry stuff and stir until the mixture is just moistened (still has some lumps/isn't perfectly smooth, etc. Perfectly smooth is the enemy of baked goods).

5) Spoon into your muffin pan and bake for 20-25 minutes.

6) Cool for 5 minutes and then move to a wire rack.

7) Enjoy!


This made 12 smallish muffins (would probably make 6 medium-ish ones, if you're using a 6-up pan). Next time I'll probably double the batch.

I made 8 pieces of bacon and promptly ate two - this was a mistake! The more bacon in the muffins the better. You might want to make extra bacon.

I cooked the bacon to cooked-but-slightly-floppy, which is my preferred bacon crispness. It worked fine, I just had to tear/chop it instead of crumbling.
